Mexican breakfast

In Mexico most often people are having late breakfast and usually a heavy one! That comes as a surprise for Europeans that we are used to have just juice, bread with marmalade and perhaps a boiled egg or so, even a hotel's buffet is usually limited to a variety of cold cuts and cheeses, eggs, breads and cakes, marmalades and honey, and fruit.

Here is a very different story, a typical breakfast often includes some form of fried eggs with some sauce, like huevos rancheros or huevos divorciadoschilaquiles sometimes with chicken in green or red sauce often spicy, always accompanied with mashed beans. A plate of fresh fruits or a fresh juice is also present, and if you have a coffee or hot chocolate as well, it is usually accompanied by a sweat bread. It is also very common to have yesterdays left over meal or dinner for breakfast. Of course hot tortillas are always there too!

Depending on the region the above can also be accompanied by cecina a slice of thin meat, machaca, nopales, avocadofried bananas, tamales, molletes, enchiladas, empanadas, gordidas.... And some of the famous breakfast meals for the really hungry ones birria, menudo o modongo.
